A fresh nose of subtle lycee and nettles and very textural wine with hints of chalk coming
from being skin fermented.
The sauvignon blanc was handpicked and de stemmed to half ton fermenters and left to its own devices with the wild yeasts from the vineyards for seven days. The wine is unfiltered, so is a raw expression of our vineyard.
The fruit is estate grow on the north facing Ah Chow vineyard that rises to 700m. This site is characterised by its decomposed granite soils with shale, quarts and limestone seems that run through it.
