Both parcels of Pinot Noir and Chardonnay were handpicked and gently pressed to stainless steel tank for cold settling. Clarified juice was then fermented at cool temperatures. The wine was then held on lees in stainless steel tank and stirred weekly for 3 months before secondary fermentation was undertaken in bottle. The wine has spent 18 months on lees and has great bottle ferment characteristics.

Summer saw rain at regular intervals with no heat waves to stress the vines. Autumn dried off in perfect time for ripening resulting in no botrytis or mildew.
