Both parcels of Pinot Noir and Chardonnay were handpicked and gently pressed to a stainless steel tank for cold settling. Clarified juice was then fermented at cool temperatures. The wine was held on lees in tank and stirred weekly for three months before secondary fermentation was undertaken in bottle. The wine has spent three years on lees and has great bottle ferment characteristics.
A text book season of warm days cool nights. Winter rain recharged the soil profile in time for spring to kick off with good vigour, resulting in perfect flowering and fruit set. Summer saw rain at regular intervals with no heat waves to stress the vines. Autumn dried off in perfect time for ripening resulting in no botrytis or mildew.
