The fruit was handpicked and gently pressed in stainless steel to ensure minimal colour from the skin. Fermented at cool temperatures using wild yeast from the vineyard.
The 2018 growing season kicked off with average soil moisture, creating a balanced canopy requiring little supplementary irrigation. A dry summer with quenching late February rains relieved the vines for a clean harvest in mid-march.
