A Poachers country wedding…simply perfect.

 

Our next Wedding Open Night is on Thursday 16 March 2023.
See Poachers all dressed up for a wedding, meet some of our excellent vendors and try our wedding menu!

Starting at 6PM, arrive for complimentary Poachers Vineyard sparkling and canapes, tour Poachers’ key ceremony and reception spaces; the Homestead Lawn, the Smokehouse Restaurant, the Kitchen Garden and the Marquee, and chat with a range of Canberra’s wedding businesses.

At 7:30PM enjoy a three course dinner in the Smokehouse Restaurant.

There are two types of tickets:

Tour of Poachers with complimentary wine and canapes (free). Book your ticket here.

Tour & dinner: $85pp for 3 course menu

The dinner menu can be viewed here.  Please note any dietary requirements at the time of booking. All dietary requirements can be catered for with notice.

The cost of the meal is due at the time of the booking.
Menu items are subject to change only if ingredients become unavailable from our suppliers.  Cancellations are to be made 48 hours prior to the dinner or the full cost of the dinner will be charged.

𝑷𝒐𝒂𝒄𝒉𝒆𝒓𝒔 𝒂𝒕 𝒉𝒐𝒎𝒆: A Classic Marmalade Glazed Ham inspired by @donna.hay. Enjoy with our Poachers Vineyard Pinot Noir. 

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
+ 2 cups orange marmalade
+ 1/2 cup honey 
+ 1 cup orange juice 
+ 1 whole Poachers leg ham (9-10kg)
+ cloves for studding

𝗠𝗲𝘁𝗵𝗼𝗱
1. Preheat oven to 200°C. Place the marmalade, honey and orange juice in a saucepan over high heat and whisk to combine. Bring to the boil and cook for 5–7 minutes or until thickened slightly. Set aside to cool slightly. 
2. Using a small, sharp knife, score the ham fat in a diamond pattern and cover the hock with aluminium foil. 
3. Place the ham on a lightly greased wire rack in a baking dish lined with non-stick baking paper. Push a clove into each diamond and brush with the glaze. Cook for 90-110 minutes, brushing with the glaze every 10 minutes, or until the ham is golden and caramelised. 

+ To remove the skin, use a sharp knife to score the skin around the hock, then use your fingers to gently remove the skin from the ham. Trim any excess fat.

+ For a half leg ham (4-6kg), halve the ingredients & reduce cooking time.
