Serving picnic hampers to enjoy Monday to Thursday.  Friday to Sunday we have  a 3 course lunch from 11.45am with two sittings.  Saturday and Sunday we have a 2 course brunch from 9.30am to 11am.

Sicilian smoked chicken and mozzarella pizza

Serves 2 for light meal.

Ingredients

200g Poachers Sicilian smoked chicken breast, sliced
1/2 cup good quality basil pesto sauce
1 pre-baked pizza base
1/4 cup sliced sundried tomato strips
1 cup artichoke hearts, drained well and sliced
1/3 cup sliced mozzarella cheese
1/4 cup shredded tasty cheese

Method

Preheat the oven to 230 degrees Celsius. Spread pesto sauce over the pizza base. Arrange chicken pieces, sundried tomatoes and artichoke hearts over the sauce, and sprinkle with cheeses.
Bake for 8 to 10 minutes in the preheated oven, until cheese is melted and lightly browned at the edges.
Accompany with fresh green salad.
